Where It All Begins
The Fire

Everything at Ember & Ash begins with the hearth. Not a gas flame. Not an induction element. Live fire — oak, cherry, apple, and hickory — sourced from a single farm in central Wisconsin that has supplied us since we opened.

Fire is unpredictable. It requires attention, adjustment, and judgment that no machine can replicate. That unpredictability is not a problem to be managed. It is the point.

The flavor that fire produces — the char, the smoke, the caramelization — cannot be faked. You can taste the difference. Our guests always can.

The Wine Program

Our sommelier, Margaux Delarue, has spent fifteen years building a cellar that respects both the classics and the unexpected. Burgundy and Barolo sit alongside natural wines from Georgia, pét-nat from the Loire, and orange wines from Friuli.

Every pairing is a conversation, not a prescription. Tell Margaux what you love — or what you want to discover — and she will find you something you didn't know you needed.

An Evening at Ember & Ash
What a typical evening looks and feels like, from arrival to farewell.
6:00 PM
Arrival & Welcome Drink
You are greeted by name. A welcome cocktail — The Hearthside — appears without being asked for. The room smells of wood smoke and something roasting slowly in the back.
6:15 PM
Amuse-Bouche
A single bite arrives. It changes every night. It is the chef's opening statement — a signal of what the evening intends to be.
6:30 PM
The Menu Unfolds
Courses arrive at the pace of conversation. Never rushed. Never slow to the point of interruption. The kitchen watches the room as much as the food.
Throughout
Open Kitchen Theater
The hearth is visible from every seat. You can watch your food being cooked. The fire does not perform — it simply does what it does. The spectacle is incidental.

Dessert & Mignardises
The final courses. Petit fours arrive with your coffee or digestif. There is no bill-dropping hint. You leave when you are ready, and not a moment before.
Your Call
The Farewell
You are thanked by name. Your coat is retrieved. The chef, if timing allows, comes out to say goodnight. Some guests stay talking until nearly midnight. We have never rushed anyone out the door.
