Ember & Ash opened in 2019 with a single conviction: fire is the most honest way to cook. No sous vide machines. No immersion circulators. No tricks. Just heat, wood, time, and the hands of a chef who knows how to use all three.
Chef Daniel Voss had spent twelve years cooking in Michelin-starred kitchens across Europe before returning to his hometown of Chicago. He had worked in places where the techniques were impeccable and the soul was absent. He wanted to build the opposite.
The restaurant was designed around the hearth, not the other way around. Eighteen seats because that is the number you can cook for with full attention and without compromise. The same number today as the day we opened.
Five years later, the fire is still the same fire. The commitment is exactly as it was on the first night.
